Cyrille Sevin, since 2007 is managing a 10.5 hectares vineyard in Mont Près Chambord. He’s doing an organic farming (non-certified biodynamic). 100% of the harvest is hand-made. The fermentations are without added yeasts.

At the heart of the Cheverny and Cour-Cheverny appellations of origin in the town of Cheverny itself, the 25-hectare family estate is located on the route to the Loire castles (Chambord, Cheverny, Blois, and Troussay).
Three types of soil stand out: silico-clay (Sologne sands), silico-clay-limestone and gravel on faluns (former marine sedimentation), all on limestone bedrock.
The young and vigorous vines are grassed. Elsewhere, the land is plowed and cultivated. Manual harvest in order to sort the grapes and maintain their integrity.
In the cellar, the team limits itself to monitoring the different phases of winemaking, without technical artifice. The grape varieties are vinified separately, without yeasting and with a minimum addition of sulfur.

A pale yellow color for this white wine, with golden reflections when ageing. Lively when it’s young, there are the aromas of almond paste, peppermint or apple, then evolving into acacia and honey. Very long finish.

Family exploitation of 40 hectares producing white wines (80% Sauvignon -20% Chardonnay), rosé and red (80%Pinot Noir and 20% Gamay) of Cheverny Appellation and white wines from Cour Cheverny Appellation. Located on the right bank of the Loire, the clay soils near to the river give very aromatic white wines. The red wines are light and fruity and are made along the Cosson river.
The wine has a light spicy and peppery bouquet, which give a long freshness. It can be served with salads, delicatessen, cold meats, spicy cooking….Drink it around 8-10°C.

The Domaine de Montcy now has around thirty hectares spread over four main plots located in the communes of Cheverny, Cormeray, Chitenay and more recently Celettes. The grapes are vinified in a natural way, without yeasts and without enzymes to best bring out the terroir.

Le petit Chambord is a family exploitation from father to son for 4 generations. It’s a 20 hectares vineyard, in the heart of the Appellation, with the Cheverny forest at the east which is the beginning of the Sologne. The "Romorantin", the most important grape, made the reputation of our white wines. The production is sustainable “Terra Vitis” and the harvest is handmade.
This wine has a shining ruby color. The nose has red and black fruits (blackberry, cherry). The mouth has silky tannins, which give the roundness and power to the wine.It can be served with grilled meats, poultry, but also with a chocolate cake.
